Barbara Spencer from Windrose Farm used to grow it, but chefs were the only ones who bought it, and not many of them!

Gnudi, or Gnochetti di Ricotta as they were called on the Angeli menus was a staple for over a decade at my restaurants. My preferred version is made with beets shredded into the ricotta.
